1 can (400 g) black beans, washed and drained
1 large diced avocado
1 large diced tomato
1/2 red onion, sliced into thin half rings
1 garlic clove, minced
1/4 cup fresh cilantro, finely chopped
Juice of 1 lemon
2 tablespoons extra virgin olive oil
1 teaspoon ground cumin
Salt and freshly ground black pepper to taste

Instructions:
Preparing the dressing:
In a small bowl, combine lemon juice, olive oil, crushed garlic, ground cumin, salt and pepper. Whisk well to ensure all ingredients are well combined.
Assembling the salad:
In a large bowl, combine the black beans, sliced avocado, tomatoes, red onion and fresh cilantro.
Serving:
Pour the prepared dressing over the salad and mix thoroughly.
